Food Lion Kitchen: Garbanzo Bean Fritters


Chef Ryan McGuire, chef instructor at the Chef’s Academy, creates garbanzo bean fritters.

Garbanzo bean Fritters                                             Makes approximately 10, 1oz servings

Food Lion Beans, garbanzo, canned

Garlic, raw, chopped

Yellow Onion, grated and drained


2 cloves

¼ Cup

Using a food processor or food mill pulse garbanzo beans, garlic and onion and place in a separate bowl.

Food Lion Cumin, ground

Coriander, ground

Food Lion Black pepper, ground

Food Lion Salt


Food Lion Baking powder


1 Tbsp

2 Tbsp or more

1 tsp

Fold egg then spices and salt into the bean puree and sift in your baking powder and flour. The puree should hold together when made into a ball.
Food Lion Lemon Juice

Parsley leaves, washed, chopped

Cilantro leaves, washed, chopped

Food Lion Canola Oil (for pan frying)

½ Tbsp

½ Cup

½ Cup

¼ Cup or as needed

Fold in your lemon juice, and chopped herbs. Adjust consistency with flour or water if needed. May need extra flour to coat cakes if pan frying.

Test a small amount of mixture for seasoning.

If seasoning is good portion out 2oz balls. These portions may be pattied into flat disk shapes or kept round. They may be baked on a baking sheet with enough oil to coat the pan in a 350 degree oven until nicely browned or may be pan fried with enough oil in the bottom of the pan to prevent sticking.
